In January, Nashville’s upcoming Grand Hyatt Hotel announced that celebrity chef and restaurateur Sean Brock was tapped to consult and operate its then-unnamed restaurant. Today they announced the name of the restaurant — The Continental, set to open in September of 2020. Whole roasted chicken (carved tableside) will be a menu staple, as well as Beef Wellington from the Gueridon. The forthcoming restaurant will meld Brock’s passion for culinary history with the traditional elegance of fine dining and a throwback service style.

The Continental’s traditional Gueridon service will also offer tableside cart presentations of dishes inspired by classics like trout amandine, Caesar salad, crepes Suzette, and more. Guests can also expect reimagined takes on luxury favorites from the 19th and 20th centuries, like crab Louie, lobster thermidor, and oysters Rockefeller.
